Gumpaste Flower Class with Colette Peters

This ingenious cake decorator whose miraculous and luscious concoctions have appeared everywhere from White House Christmases to Royal Weddings - presents a master class in cake design and decorations. She inspired many with her numerous books and shared her knowledge with thousands of students (can't even believed that some of my classmates came all the way from Argentina, San Francisco, Boston and Washington). For years I've been inspired by her work. Collette Peters is a great person to talk to and such joy to be around her. My two days of gumpaste flower class was such a memorable experience.
Colette has delivered cakes throughout America, Europe, and the Caribbean and has created cakes for many celebrities, including Sting, Natasha Richardson, Bette Midler, Whoopi Goldberg, ÊJann Wenner, Russell Simmons, Tommy Tune, Al Pacino, Ertha Kitte, Robert Altman, and the Rolling Stones, just to name a few. She created cakes for the weddings of Marie-Chantal Miller and Prince Pavlos of Greece and Alexandra Miller and Alexander Von Furstenburg.Ê

In 1998, Colette was asked by First Lady, Hillary Clinton, to create 3 “sugar scenes” for the Red room, the Green room, and the Grand Foyer, as part of the White House Christmas decorations. She was then asked again to create decorations for the White House 2000 Holiday season. Her unique cakes have been featured in a variety of media. Colette has appeared on the Oprah Winfrey Show, Food Network, CBS This Morning, The Today Show, Good Morning America, The Discovery Channel, CNN, and Lifetime Television. In 2004, Colette won first place in the Beaver Creek Wedding Cake Challenge, shown on the Food Network channel. She then went on to win the 2005 Food Network Mystery Cake Challenge. Colette collected a $10,000 first prize for each of these competitions. Magazine appearences include the New York Times, Town & Country, Brides, New York magazine, Food & Wine, Pastry Art & Design, and Victoria, among others. Colette has served as a food stylist for Ladies’ Home Journal, Food Arts, Womens’ Day, and Good Housekeeping. She has also created cakes for films, Broadway plays, television, and commercials. | ||

Class with Master Pastry Chef Nick Malgeri
In 1998 and 1999, he was voted one of the ten best pastry chefs in America by Chocolatier and Pastry Art and Design magazines. A graduate of the Culinary Institute of America, he apprenticed in Switzerland and was subsequently employed at the Hotel de Paris and the Sporting Club in Monte Carlo and at the Reserve de Beaulieu in France. In New York he was Assistant Pastry Chef at the Waldorf Astoria; Executive Chef at Paine Webber, Inc.; and Pastry Chef at the Board Room, a private club.
